Head Roaster Scott Richardson of Herkimer Coffee left a job in technology behind after falling in love with coffee in Seattle. He began experimenting with buying different green beans, blending coffees, and roasting in his home before owning a coffee drive-thru and working for craft coffee company Caffe Vita for over a decade. In 2007, he joined Herkimer, where he now leads their roasting team and travels all over the world sourcing coffee beans. Maintaining relationships with farmers is extremely important to Scott and owner Mike Prins, which is why Herkimer only sources coffee from small farms and pays a premium price to ensure quality and fair worker compensation. You can’t find a roaster in Seattle with more coffee stories, or a deeper scientific knowledge of the coffee roasting process.
Bringing a delicious, sweet flavor to shade-grown coffee, Herkimer’s roasting style focuses on bringing the natural sugars out of the beans. This natural sugar taste rounds out the acidity of the coffee and highlights the characteristics of the individual coffee’s origin. If you’re in Seattle, you can watch the roasting magic take place in front of your eyes with Herkimer’s Probat roaster spinning hot, fresh beans right behind their cafe counter. We encourage you to try their Drip Blend: a stand-out favorite among Bean Box customers who rave about its complex, surprising, and smooth flavor. Give it a try and let us know what you think: we promise Herkimer’s commitment to quality sourcing, meticulous roasting, and attention to detail won’t go unnoticed.
