In 2001, True North’s owners John and Maine Hofius decided to quit their jobs as software engineers and start a coffee company. While their original intention was to open a coffee house, Maine became fascinated with the romance and science of roasting. Applying the same wit and discipline she used as a software engineer, Maine is a perfectionist in every sense of the word when it comes to roasting. We’ve watched Maine apply countless roast profiles to the same beans bringing out completely different flavor profiles. All of True North’s coffees have a medium-dark roast development which surfaces rich and chocolatey flavor notes. This makes their coffees crowd pleasers and an especially good choice for cold brew.
